When I think of Easter candy, I think of Peeps! For as long as I can remember those colorful and yummy little chicks and bunnies have been a part of my families Easter basket tradition! When I was a girl I always went for my peeps first, and now that I am a mom, I love to continue the tradition with my own boys! It simply wouldn’t be Easter without a few peeps!
There are so many ways to enjoy Peeps, and so many decadent flavors that finding a favorite is easy, and sharing them with loved ones is a spring tradition to for many people for good reason! While the classic version of Peeps may always be my number 1 favorite way to eat a peep, there are some really tasty options to choose from that it is hard to resist!

I really love the Peeps Filled Delights Neapolitan Flavored Marshmallow Chicks this year. They have a lot of yummy flavors, and I love the variety! My sons all liked Mystery Peeps because it is fun to see what they might taste like. There are three mystery peep flavors, and my boys loved them all! They also were crazy for the sour cherry and sour watermelon marshmallow chicks. My husband thought the Pancakes & Syrup Flavored Marshmallow Chicks were nothing short of amazing! We loved trying all of the assorted flavors of Peeps! There are so many yummy ones it was hard to pick a favorite!

I am such a fan of I See Me! They offer a good size line of personalized gifts for kids. It’s not just your kids name on the front of a book, I mean they really personalize it. With a picture of your child, their name and sometimes picture even featured on different pages in the book. It truly is such a magical experience to watch your child see their face and hear their name as you read to them! Or hand them a coloring book that has their name on it.
I recently got The “Egg-Cellent All-in-One Gift Set” and I am over the moon. It came with stickers that have my son’s name, Clay, a placemat for meals, activity and coloring book. When he opened the package his face just shined. He is 2 ½ so when I said it had his name on it he responded, “Me?” And I said yes, and he just smiled so big. It was like he was told he won the lottery. Little kids hearts are so tender and precious, and that was such a perfect memory for me to cherish.
What I love about the coloring book is there are activities your child can do along with coloring. If they can’t really do activities because they are young, like my boy, they can still color. The placemat is really well made, so it’s gonna hold up over time: I love how it says his name, he knows that’s his spot. This would be great too if you have multiple kids, each child can find the mat with their name. Whether it’s eating breakfast or a snack your child will love it.
I also was sent the Thank You, Lord, For Everything by Zonderkidz. This is a personalized book that helps you sit down and have storytime with your little one. They learn as you read that we have so many amazing things to be thankful for in this life. We live in a bit of a harsh world so for me trying to instill a thankful heart, kindness, and love in my child is a must. Our children are the next generation. This book would also be wonderful for a baptism gift, or Easter gift. The pages are really well made and illustrations are beautiful!

Easter is the perfect time to indulge in something super sweet! This recipe for Peeps Cupcakes combines two favorite treats into one pretty package! These cupcakes are decadently delicious and make a great classroom snack before the Easter break, or a lovely addition to the dessert table at your Easter feast! Your family and friends will certainly ask you to make these again next year after they take a peek at your Peeps Cupcakes!
Makes 24 cupcakes
1 box Betty Crocker™ SuperMoist™ carrot cake mix
1 cup baking butter
1 cup of whole milk
2 Tsp. of Vanilla extract
1/2 cup shredded carrots
8 ounces cream cheese, room temperature
4 TBSPs unsalted butter, room temperature
2 cups powdered sugar, not packed
1 to 2 tsp pure vanilla extract
Easter Cupcake wrappers
Heat oven to 325°F.
In a large bowl, mix cake mix, butter, milk, vanilla and eggs on low speed using a mixer for 30 seconds.
Mix on medium speed 2 minutes.
Pour into baking cups, filling each about 2/3 full, place them in cupcake sheet holder.
Bake 17-22 minutes.
Cut out a whole in the center to fit the Peep.
Cream together the cream cheese and the butter in the bowl of a stand mixer. Add the powdered sugar one cup at a time.
Then add in the vanilla extract.
Insert your peep in the center of the cupcake.
Pipe your frosting over cupcakes around the Peep candy using a star pastry tip.
Sprinkle your Easter cake sprinkles on the frosting.
Being on the Paleo diet is not difficult and you have so many wonderful foods you can eat. The problem often comes up when there are special occasions like Easter. However, don’t let this get you down! You can still make some delicious treats and meals that are perfect for Easter but still won’t get you out of your Paleo way of eating.
What side dish is more “Easter” than carrots? You should definitely consider adding this one to your Easter dinner! Carrots are healthy, easy to make and satisfy just about everyone. This is also a good substitution for that high-carb green bean casserole people seem to like eating for every holiday meal. You can bring along these honey glazed carrots and people will be amazed they are allowed on Paleo. All you have to do is cook your carrots with some olive oil, chicken or vegetable broth, honey, white wine vinegar, salt, pepper, and butter. Yes, it is that easy!
Mayo-Free Egg Salad (With Avocado)
Do you want to make a yummy egg salad, but don’t want to use mayonnaise? If so, think about making a mayo-free version with avocado! It has the same creaminess, makes it a fun green color for the kids, and is just so delicious. It is also incredibly easy to make even with a short amount of time before Easter brunch or dinner. You just need to mix hard-boiled eggs with avocado, lime juice, and some salt and pepper. These make a good snack, lunch, or side for your traditional Easter dinner in lieu of the deviled eggs.
Paleo Ham in the Slow Cooker
Most meat dishes can be enjoyed while on the Paleo diet, but for Easter, you might not want to worry about having the oven on and heating up the kitchen, especially if it is a warm April day. A better option is to use your slow cooker to make the ham. You can season it with anything you like, but for Paleo, you want to stick to the basics like freshly-squeezed orange juice, honey, herbs, and maybe a little coconut oil and orange zest. Add it to the slow cooker and it will cook all day, be juicy when it is done, and won’t heat up the kitchen.
With these Paleo dishes, your family will be happy on Easter with their yummy foods, but you won’t feel like you have to eat something completely separate.
